Hello,
My 2015 Ford Fusion Air Conditioner wasn’t working so I was told that I should replace the AC Compressor with a new one. I did that but now everytime I turn on the AC the car loses power and the engine shuts off.
Now they are telling me that I should replace de AC Thermostat (image below red circle)

Can someone help me know if this will solve the problem and where can I buy one of these ?

Who is telling you this? Bad advice. You need a good AC expert to determine the root cause. If someone overcharged your system it’s possible the load on the compressor may be enough to cause the engine to die. Lot’s of other potential issues can do that as well.
